Li and Danielle from RawHealth.ca share two quick and easy raw food recipes using a food dehydrator; Crispy sweet potato chips and delicious zucchini rolls! Sweet Potato Chips Equipment Vegetable peeler Dehydrator Ingredients Sweet Potatoes Directions 1)Peal the sweet potato 2)Peal into very thin slice, can use grater but peeler works better, any shapes you want 3)Place thinly sliced sweet potatoes onto the mesh 4)Dehydrator for 10-12 hours overnight 5)Let it stand for a few hours makes it chewy and crispy You can hear the crisp, great garnish, instead of French fries Zucchini rolls Equipment Food Processor Dehydrator Ingredients Zucchinis 3 cups almond nuts soaked overnight 10-12 hours Pine nuts not soaked half cup chopped olives 2 tsp lemon juice 1 head of garlic (peeled) Dusle seasoning (sold at rawhealth.ca) kelp granules (sold at rawhealth.ca) Oceans Alive (sold at rawhealth.ca) 2 tsp Olive Oil Directions 1)Cut both ends of zucchini, peal into very thin slices (this is the zucchini roll part) 2)Into processor add soaked almonds, 1 cup pine nuts, one head of garlic, lemon juice, 2 tea spoon on olive oil. oceans alive 2 drops, dulse seasoning 3)Start to blend 4)When it starts to formulate a ball it means is a nice thick texture which is great 5)Take the filling out 6)Put in half cup of chopped olive with the filling 7)Overlap 2 slices of zucchini, take 1 spoon of filling and put overtop of sliced zucchini and start rolling tight 8)Put into dehydrator 9)Put in for 3-4

Ching He Huang/Chinese Food Made Easy/ Spicy Sichuan Chilli chicken with jasmine rice www.chinghehuang.com www.mogu.com.tw Ching makes a chilli chicken dish at a temporary street stall at Chorley market, Lancashire Chunky bacon and cucumber salad Ching makes a dish often served as a starter in Chengdu and all over Sichuan, spicy cucumber salad in vinegar and Sichuan pepper oil. Ingredients For the sauce 4 garlic cloves, finely chopped 2.5cm/1in piece fresh root ginger, peeled, finely chopped 1 red chilli, de-seeded, finely chopped ½ red pepper, de-seeded, sliced into strips 2 tomatoes, sliced 5 tbsp water 2 tbsp tomato ketchup 1 tsp light brown sugar For the chicken 1 tbsp groundnut oil 250g/9oz skinless chicken breast fillets, sliced 1 courgette, sliced into strips ½ red or yellow pepper, de-seeded, sliced into strips 2 tbsp light soy sauce 2 large spring onions, sliced lengthways Method 1. For the sauce, place all of the sauce ingredients into a food processor and blend until smooth. 2. For the chicken, heat a wok until smoking and add the groundnut oil, then add the chicken and stir fry for 2-3 minutes, or until lightly golden. Add the courgette and red pepper and stir fry for 1-2 minutes, then pour in the sauce and bring to the boil. Cook for a further 2-3 minutes, or until the chicken is cooked through. 3. Season with the soy sauce, and pile onto a serving plate. Garnish with the spring onions and serve immediately.
